We have a lot of Elderberry trees and this makes for a lot of cordial which stores well (if it lasts that long). We make Rhubarb and Elderflower Cordial and Winter Cordial (elderberry, plum, honey, cloves and cinnamon and fresh ginger) which is great hot or cold. We also make lemon drink (my grandmother’s recipe) and variants on that depending on the citrus fruit available - the grapefuit one is really good! We also experiment – Cherry plum with lemon verbena and Bayleaf was pretty interesting – depending on what fruit we have in bulk. Dark plum cordial is really good, blackcurrant vinegar is an old recipe (another Grandma one i suspect) that delivers great flavour. You get the idea.
Cordials come in 750ml bottles.
The first batch of Elderflower and Rhubarb is in bottles, two batches of Elderflower and Tamarillo are completed, and there are still SO MANY elderflowers up the hill... Elderflower and Lime done! Back to the Rhubarb and Elderflower...
And now magically we 're into the elderberries! Have made two large batches of winter cordial - one Elderberry and plum, one Elderberry and blackberry. We also made Cherry plum with lemon verbena and bayleaf - that's a good time.
