Tomato, eggplant and buckwheat bake - Vegan and DF (if you use vegan cheese option) and GF

This is one of those "one step after another" recipes , very well paced and low stress! Heaps of flavour and all you need might be a salad to go with! I think this would hold up well for lunch the next day of there's any left...It's pretty much what it says it is, with some basil and some variety of cheese to melt on top. 

Mapo tofu with brown lentils - Vegan, DF and GF

This super tasty dinner is laced with sichuan peppers for aromatic mouth-numbing warmth...! It's quick - about half an hour - and deeply satisfying. As well as the sichuan pepper there's garlic and ginger, spring onion, rice wine, tamari and veg stock...

Potato and broccoli smash - Vegan, DF and GF

So this is very simple - cooked potato, lightly cooked broccoli florets; garlic and chilli sizzled til frangrant. Lean on the broccoli and potato to break them up a little then pile them into the frypan with the gartlic and chilli, compact them together into a round and sizzle until crispy golden on the bottom. Flip (as best you can) and sizzle the other side til golden. You could add half a tin of drained chickpeas in here for a more substantial thing. Serve with whipped feta is super yum.

Gozleme - vegetarian only

These Turkish flatbreads are stuffed with chard and feta here, but could also be stuffed with spiced lamb or beef (and then dairy free). They're made with wheat flour but if you have a GF flour mix on hand this would be worth a crack. (I can put one together for you if you wish). These would be a great after school snack - you could work ahead and have the dough prepped, as half of the time required for these is resting the dough before rolling. Also good for home movie nights...

Steak Salad - DF and GF

Have this with some good bread, and dinner is ready in 15 minutes. Also a great way to make a small amount of very good steak go a long way...

The salad base has loads of salad-y things in it: assorted lettuce leaf, radish, cucumber, tomatoes, spring onions. Once the steak is done to your favourite done-ness, a swirl of cream in the pan will lift pan juices and become a creamy delicious dressing...

Baked fish with Asian greens - DF and GF

This is such a light and delicious thing! Flaky white fish fillets (greenbone if you can find it, monkfish, sole or bream...) baked with s & p and some olive oil until only just done; while that happens stir fry some chopped pak choi or other Asian greens with garlic, ginger and chilli, some tamari and sesame oil... That's it.Sublime!
