This is one of those sneaky ones that has a vegetarian and meatarian version, and I'm going to cheat further by using a single image for both... The Peru Hotpot Vegetarian version has eggplant. The meat version has beef mince... also egg, red onion and a couple of handfuls of whatever veg you have on hand - mushrooms, broccoli, capsicum, spinach, Chinese greens... and some kumara. Vegetarian - or not - GF and DF
I know this recipe featured in Christmas boxes, but a roast chicken that takes less than an hour is worth repeating... Butterflied chicken with paprika and lemon is yum. And still yum the next day for lunches - if there's any left... Roasted garlic mashed into roasted parsnips to go with ... Very Good. GF and DF.
