The flavour blend of roasted beetroot, just-cooked puy lentils cooked in stock, toasted walnuts and wilted rocket (with a splash of lemon juice) was even better than i expected it to be! I did roast the beetroot too long, so expect this to look better than the photo if you're making it... The beetroot, lentil and walnut is vegan, dairy and gluten free.
Black dal is a combination of urad dal and mung beans; the spice blend has turmeric, cumin, cinnamon and cloves. There's a bit of fresh chilli, a handful of tiny tomatoes, some lemon and flatleaf parsley... for a round and deep flavour it takes only half to three quarters of an hour! Last week i made about 3 different iterations of this soup, and each time i had finishied it before i thought to photograph it... This version has coconut milk in it which of course makes it extra creamy and delicious. There's garlic, ginger, peanut butter, potato, maybe some chilli if you wish. These are a great holiday food - parsley and parmesan (or pecorino if you're dairy-intolerant) pikelets with pumpkin hash... The pikelets have flour and milk and also egg so this one is Vegetarian only. The hash has rosemary to brighten up the mild pumpkin flavour, and the whole thing only takes about half an hour to pull together.
Yum. Thats all i have to say about this one really. Yum and easy. The chicken thighs, chunks of potato, pumpkin and red onion are smooshed together in a ziplock bag with spices, oil and minced garlic, left for up to 3 hours, then tipped into a roasting dish. Then roasted. Flip them round a bit after about 20 minutes, poke a chicken thigh with a pointy thing at about 30 minutes... if the juices run clear you're done. Masala roasted chicken is Very Good. Is also dairy and gluten free.
This is one of those recipes where we pretend apples are actually a vegetable. Pork and apple meatballs are tender, light and delicious. Also quick to make!
