
Katsu tofu - Vegan, DF and GF
This one is crispy... the outside crunch is from cornflakes, the batter has garlic powder, paprika and salt as well as psyllium husk and mylk or milk as you prefer. You can serve this with creamy avocado slices, and some pickles, maybe on a bed of mixed rice or some breads...
White bean and kale soup - Vegan, DF and GF
This is a Tuscan soup with a Middle Eastern vibe (Shatta... great flavour profile!) It features cannelini beans, capsicum, onion and carrot, some cavolo nero, garlic, some fresh herbs, tahini and lemon... The flavours are deep and subtle. It's a good substantial soup and has all the colours in there!
Kumara rice bake - Vegan, DF and GF
There's tofu and black beans in here as well as kumara and red rice, either frozen green beans or broccoli (which ever your family prefers really). After softening the onions, everything gets piled into a baking dish together, the sauce (stock, tomato, peanut butter, ginger, garlic) poured over the top and then you cover with foil and bake for about half an hour. Take the foil off, give it a stir and put it back til things are browned and crispy... Very simple!
Silverbeet pie - Vegetarian, can be GF
One of my small people refused to eat quiche but was perfectly happy to eat silverbeet pie...Gluten free pastry is available in your supermarket (If you'd like this recipe i will pop some in your bag as needed). This is a straightforward one-thing-then-another-thing kind of recipe, and if you go for pre-rolled pastry it can be a really quick and easy for midweek dinner (also good for lunch the next day).
Open Kibbeh with lamb - DF only
This is unusual but actually very accessible - the base is made with fine bulghur, flour and oil, the middle layer is a spiced lamb mix, the topping is a tahini and lemon sauce, baked til puffy and golden... It looks like a layer cake, tastes like your favourite Middle Eastern lamb dishes: super tasty and kinda fun...
Winter chorizo stew - DF and GF
This has some unexpected veg - parsnip, pumpkin - chorizo, red onion, garlic, smoked paprika, fresh chilli and tomato all go together in a much more predictable way! I found i still had some fettucine from Artisan Pantry in my freezer, this chunky spicy sauce was perfect with that. (I discovered a few more in the freezer also). The roasted broccoli was a great addition - crunchy and peppery.
