Roast winter veg with halloumi (or tofu) - Vegan, DF and GF

You will need to make that substitution for this recipe to be vegan and DF...This will work with whatever veg you feel like including - a mix of root vegetables(roasted), brassicas (Blanched then roasted) and nuts. Sesame oil in the roasting gives a delicious nuttiness to the flavours. 

Crushed potatoes with adzuki beans - Vegan, DF and GF

The potatoes are parboiled before being leaned on gently to break them open... then you crisp them up in the oven while you make the bean mix - soaking the beans is optional, but it will make the cooking faster. The mix has mushrooms, onion, chilli and tomato paste; you could finish it off with a knob of soft goats cheese for a dairy free option.

Chickpea and lemon stew - Vegan, DF and GF

This is super tasty and very quick to pull together! The lemon is offset with coconut milk, there's spring onion and turmeric, and the slow simmer makes the chickpeas meltingly tender. So it's creamy and zingy at the same time ... a sprinkle of fried shallots for a crispy finish and you're all done!  i teamed it with mixed rice and lentils (Red rice, basmati and split red lentils). Stirring through a small handful of chopped coriander leaf would brighten up the colours and flavours even more!

Buckwheat crumble of roast veg - Vegetarian, DF and GF

This is definitely a meal in one dish - there's a roast of carrot and beetroot, onion and Granny Smith apples (honorary veg for the day)  - that happens while the buckwheat is simmering... Shredded greens make a blanket for the roasties, the buckwheat is drained and teamed with sunflower seeds and crumbled goat cheese, maybe some  S & P to taste? Then you pack the crumble gently but firmly on top of the greens on top of the reds and pop it in the oven to bake. All up this will take about an hour, but at least half of that time is baking in the oven while you do something else.

Salmon soup - DF and GF

This seems a bit fancy -  using only a small amount of salmon to achieve a very fine result! There is a stack of flavour from garlic, ginger, fish sauce. There's a creamy soup base of potato, leek, coconut milk and spiked with lime, then salmon finely shredded and just cooked ...It will only take about half an hour from start to finish.

Masala roasted chicken and pumpkin - DF and GF

This is so simple, and you can include your favourite vegetables - yams would be a good shout along with the pumpkin. Everything goes into a large ziplock bag - chicken thighs, vegetables, garlic and ginger, spices and some olive oil.... smoosh it all together and then leave for at least half an hour. Then pile it all onto a roasting dish in an even layer and roast it for about 40 minutes. That's it really!
