New potato and asparagus salad - Vegan/Vegetarian, DF and GF
The lightly poached egg on top is optional, but it is one of the best things to dip lightly cooked asparagus into ... this is super simple, because why would you need to mess with new potatoes and fresh asparagus?
Asparagus, butterbeans and peas - Vegetarian, GF
You could make this DF by using pecorino cheese, and coconut yoghurt... It's a simple one-step-after-the-other kind of recipe and results in a salad that has plenty of substance. I would add something orange or red cos i'm a bit obsessive about eating the colours. There's asparagus, butterbeans and peas, obviously, and also pine nuts, lots of fresh herbs in the dressing. It's very good! Also super quick to put together - 15 to 20 minutes.
Batata Harra - Vegan, DF and GF
Crispy potato, soft caramelised capsicum, garlic and chilli flakes, fresh coriander and lemon... This is a Spanish recipe and although it takes half to three quarters of an hour, most of that time it's doing its thing in the oven while you do your thing elsewhere.
Vegetable lentil bake - Vegetarian, GF
This one has grated cheese as a key ingredient, so i'm not sure i can make it DF. It has red rice and red lentils, and a stack of vegetables: mushrooms, leek, capsicum, courgette... These are mixed together with the rice/lentils, and then layered with grated cheese and baked. It's quick, and a whole meal in a baking dish!
Thai fish curry - DF and GF
This is a bit of a fridge clearer... what are those vegetable remnants lurking in your fridge? Use those! Broccoli is useful, carrot or capsicum, kumara or potato... frozen beans? The fish steams on top of the vege once they're cooked, so it only takes about 20 minutes total- start the rice first!
Crispy chicken and new potato salad - DF and GF
Once again, why mess with a good thing?! New potatoes in chunks cooked lightly; chicken breast or thigh cubed and dredged in chickpea flour, a generous amount of rocket and some lemon. That's about it really!
