Recipes for Christmas

I'm still working on photos for some of these, but i'm aware that time is marching on and you need to know what your options are!

Buckwheat with spring veg - Vegan, DF and GF

We did have this one recently, and it looked so Christmassy i've dropped it in here again. The flavours work really well together and we will just manage to still have some asparagus for Christmas!

Jewelled quinoa - Vegan, DF and GF

This is a light and super tasty dish you can prepare ahead - a  great option for a family banquet or a shared meal also. Pomegranate is pretty much deliciously tart, ruby red bites of juice. Yum and yum.

Upside down onion tart - Vegetarian, DF and GF 

This is a simple square of bought flaky pastry, with a caramelised balsamic onion topping that is cleverly made upside down. This will require GF flaky pastry (easy) and goats cheese (also easy) to be dairy and gluten free. Otherwise, as easy as - well - pie!

 

Red rice with butterbeans and pomegranate - Vegan, DF and GF

Again with the pomegranate - i am unapologetic! The butterbeans are fried til crispy on the outside and meltingly tender inside, the broccoli is tender and bright green and the pomegranates do what they do so well...

Mushroom and spinach loaf - Vegetarian, DF and GF

I overcooked this slightly ... There are chips of sundried tomato in there as well as the mushroom, garlic, onion and spinach, so the colours are quite festive...

Flatpack chicken with buttermilk, paprika and ginger - GF

This is one you can prepare ahead and leave to macerate in the fridge. The butterflied chicken takes about 20 minutes less to cook, but you can also do the whole chicken and then you can tuck half a lemon inside, rather than wedges underneath. Semantic perhaps. Either way it is amazingly aromatic, tender and moist. 

Pork loin with rosemary salt and maple apple sauce - DF and GF

You toast the rosemary and salt in a dry frypan then grind them together to make  rosemary salt. Gently peel back the skin and fat on the loin and sprinkle the rosemary salt in between, tie the loin securely and roast until crunchy and delicious! Peel, chop and cook some granny smith apples in minimal water til mashable, then mash and maple syrup and S & P to make the sauce. Simple and elegant and oh so special! Also exceedingly delicious...
