The tofu is drained then crushed, cooked with spices, red onion, jalapeno, garlic and ginger as well as chopped fresh tomato and coriander leaf. It's super quick and very well-rounded for such a fast food option!
Beetroot and ginger soup - Vegan, DF and GF
This is such a stunning colour, and the flavour is vibrant also - ginger, garlic, jalapeno for some heat and beetroot of course, plus potato to thicken it a bit... The veg will simmer for a while so you have time to read some stories, hear about someone's day...
Vegetable braise with capers and soft cheese - Vegetarian (cheese can be omitted for vegan), DF and GF
I made this for dinner the other day, just using what i found in the fridge. It turned out really well, just needed a small tweak (adding capers - was a good shout) to be good enough to share... It has red onion, potato, carrots, courgette and garlic, some fresh tomato chopped in and capers added then covered to cook slowly for a bit. It gets deliciously jammy... Goats cheese for Dairy free, or just leave the cheese out for vegan...
Malaysian egg curry - Vegetarian, DF and GF
This curry is just different... The texture of the soft boiled eggs in the curry is unexpected, the flavour combination of gentle egg and punchy curry sauce is unexpected... This one is definitely worth a try i reckon (obviously or it wouldn't be here!)
Smoked salmon fish pie - DF and GF
This is a great meal-in-one dish dinner, and you could actually prep it beforehand, leave in the fridge and bake it when you get home if that would be useful. It will only take about half an hour to pull together anyway... The mash is made with potato and creamed corn, there's a layer of broccoli and cubed pumpkin under the topping ... and it doesn't take a lot of smoked salmon to go the distance.
Slow chicken curry - DF and GF
This is so sneaky! You just put everything either in the slow cooker, or a casserole dish with a lid, and leave it to cook. No searing, no sizzling... just all in. The curry is fragrant, the chicken is fall-apart tender. I added kumara for a bit more substance, and added spinach to the basmati rice to make sure you eat your colours...
