There is a bit of heat to the Berbere spice mix, so add a bit at a time until it's just right for your people...The stew has brown lentils and dried fava beans, onions, tomatoes, parsley... it's a hearty thing, good with some breads and salad...
Adzuki bean curry - Vegan, DF and GF
This curry is full of aromatics - whole spices (cinnamon, mustard seeds, chilli flakes), fresh aromatics (garlic, ginger, more chilli!) and a blend of toasted and ground spices (coriander, cumin, turmeric and garam masala). Is a very good time! Will take an hour, but is definitely worth it...
Honey and soy roasted pumpkin and tofu - Vegan, DF and GF
This is a very simple thing and delicious. The pumpkin and tofu are coated in a honey and soy glaze (with hits of chilli and ginger) then roasted in the oven. Partway through you top the pumpkin with sliced garlic and oil, then return to the oven some more... Sprinkle with sesame seeds and sliced spring onion...
Pakora - Vegan, DF and GF
I made these using chickpea flour for extra crispiness; the batter has oil, water, baking powder and a hint of garam masala... i sliced red pepper, red onion, broccoli and portobello mushrooms, coated them in the silky batter and shallow-fried them in my wok. Was a very good time. The peeled and sliced broccoli stem was stand-out winner on the day!
Chicken burgers with sesame and ginger - DF and GF
These will be from start to table in less than half an hour. They are SO yum... have them with wedges or buns or whatever you feel like really. The dipping sauce is light and fragrant and a perfect friend for the burgers...
Sticky sweet and sour plums and sausages - DF and GF
Pile things into a baking dish, roast for a bit, add more things (the plums, sausages and liquid) and roast some more. Lightly steam some greens to go with. Done. I squeezed out the roasted garlic and removed as many papery outers as i could ... This takes a bit of time - maybe an hour altogether - but the active cooking time is negligible!
