
Fava Falafel - Vegan, DF and GF
Please note - this one is slow food: you need to soak the dried fava beans overnight, and then the making will take about an hour and a half (half an hour of that is resting the mixture before cooking).
These falafel are made with fava beans - dried broad beans. They are stacked with aromatic herbs and spices, patted into rounds and shallow fried til crispy and golden. Add them to wraps with salad or include them in a Middle Eastern feast of different dishes. If you have the time, these are definitely worth the effort!
Tunisian chickpea soup - Vegan, Df and GF
This is a sturdy soup with lots of flavour and plenty of substance. It has chickpeas (obviously) pumpkin, kale, onion, spices and stock. The spices are aromatic rather than hot. Serve with some bread to mop the plate...
Honey and soy tofu sticks - Vegan, DF and GF
This is fast food, to make up for the previous one...The firm tofu is fried until golden and crispy then splashed with a honey and soy sauce mix; simmer gently until the sauce has become a delicious coating on the sticks... Sticky in more ways than one.
Corn and Cauliflower chowder - Vegan, DF and GF
This one is made creamy with coconut milk - and blitzed cauliflower. It's very simple to make; the squeeze of lemon toward the end of the cooking, and the sprinkle of charred corn, chopped chilli and cashews make it a bit special. The leaves from the cauliflower are sauted at the end as well and included in the corn and chilli sprinkle.
Mustard chicken and potatoes - DF and GF
I added chopped buttercup pumpkin and onionweed leaves for some additional colour. This has two kinds of mustard - grainy and not grainy- potato and chicken pieces.Skin-on gives you better flavour i reckon but it can be harder to find. This one starts on the stovetop and finishes for a half hour or so in the oven, it's quite hands-off for much of the time.
Black pepper beef - DF and GF
The black pepper beef is quite quick to make and very tasty. There's a sauce/marinade of ginger, garlic, soy and oil for the beef. The potato and kumara are parboiled to speed up the process a little, then everything is piled back into the pan with the remaining marinade/sauce to be lapped in deliciousness...
