
Mushroom and buckwheat with dried plums - Vegan, DF and GF
As with the quinoa recipe later on this page, toasting the grains to start off gives them a nutty flavour - well worth the small amount of extra effort! While the buckwheat is cooking you have time to prepare eveything else: saute-ing the mushrooms with garlic and chilli, and shredding parsley and spring onion or onion weed tops. The whole thing will only take you about 20 to 30 minutes, and the squeeze of lemon added with th3 chunks of dried plum give the whole thing a tangy finish. Yum.
Broccoli and chickpea satay - Vegan, DF and GF
The flatbreads here are super simple, made with flour (GF flour blend as required), baking powder and coconut milk. The satay uses the other half tin of coconut milk, garlic, onion, curry paste, peanut butter, chickpeas and broccoli, It's very simple and delicious.
Quinoa and black beans with kale - Vegan, DF and GF
This is so flavourful! Again the quinoa is toasted as a start to the cooking, but this time the toasting happens in oil already flavoured with cumin seeds and thin slices of garlic. While the quinoa simmers gently, you zest and juice a couple of limes, add spring onion, pickled jalapeno and chopped fresh coriander.
There are black beans and shredded kale added to the cooking quinoa, then the lime and jalapeno mix is stirred through. Toast some sunflower and pumpkin seeds and sprinkle these over the top then crumble soft goats cheese over.... is a very good time!
Crustless chard quiche with feta or goat's cheese - Vegetarian, DF and GF
You can make one big one or many small ones (or a combo of both) - the small ones are particularly good for lunches. As well as the chard there's onion, garlic, feta or goats cheese, and finely chopped other veg (cauli, broccoli?), also flour or chickpea flour, and milk or plant-based mylk, and some spices. These are very tasty!
Oven-baked lamb kibbeh - DF only
Usually kibbeh are formed around a skewer but this one is baked flat and cut into squares. It's a mix of burghul wheat, lamb mince, spices and onion. It's very simple to make and very accessible for smaller family members to enjoy!(i hope)
Chicken and mushroom comfort pie - can be DF and GF
This is very much what it says on the tin (except there is no tin). Mashed potato top on a flavourful and tender chicken and mushroom casserole... what's not to love?!All done in less than an hour...
