Curried Chickpea salad - Vegan, DF and GF

This is very simple and would work well with maybe another salad and some good bread. Chickpeas are spiced up, there's red onion, currants and a handful of parsley. This will only take you about 15 minutes to pull together.

Buckwheat and mushroom salad - Vegan, DF and GF

If you're looking for a second salad to go with the chickpeas this might work... Buckwheat has a great nutty flavour and the grains hold their texture really well. The contrast with mushroom is very good, and the flavour is brightened up with some lemon and chilli flakes, with spring onions and parsley adding spring colour...  This one is also very quick to make - about 30 minutes. 

Warm noodle salad - Vegan, DF and GF

You can use rice noodles or sweet potato noodles for a GF option - the picture has soba noodles.There's a lot of colour and flavour happening in this bowl! The veg are blanched then steeped in a flavourful marinade; then the noodles are cooked and added to the veg, stirred gently to coat with the marinade. Extra herbs added, again stir gently... Again, only a half hour and this is all set.

Kale and cheese pikelets - Vegetarian

These are a great brunch option i reckon, they also pack well for lunches. The kale is shredded and blanched, then drained and added to the pikelet batter along with cottage cheese, grated cheese, melted butter and lemon zest. The pikelets are made extra light by separating the eggs and whisking the whites before folding then in. Definitely worth the effort. 

Prawns with orzo - DF (use long grain brown rice for GF version)

This will need about 100gm of uncooked prawns per person - there's a lot of impact with a little amount of seafood. The basil and mint team up with frozen peas to make a fresh spring flavour, and it's all finished off with either feta or goats cheese. 

 

Sichuan double cooked pork belly - DF and GF

This is a bit of a showstopper, frankly. It's Very Good! It will take a little longer to make but a chunk of that time is waiting for the pork to chill once it's had its first cook. This is quite simple to make, and absolutely delicious.
