Asparagus and Mushroom stir fry - Vegan, DF and GF
This is very much what it says on the tin: a stir fry of asparagus and mushroom... Stems of asparagus cut into angled batons, portobello mushrooms cut in thick slices, splashes of mirin, tamari and lemon juice, some sesame oil and garlic. Simple, delicious and super quick!
Caponata - Vegan, DF and GF
This is a Sicilian vegetable stew, jam packed with flavour: eggplant and potato for substance; garlic, green olives, capers, tomatoes, fresh oregano for flavour; parsley for colour (and vitamin C)... Then find yourself some great bread to soak up the juices. Yum and Yum.
Dirty Rice - Vegan, DF and GF
Dirty Rice is a Creole dish - this version has white and red rice, adzuki beans, whole kernel corn, coriander and a big stack of aromatics plus some chilli for heat. This is not quiet food. It is quick, and it is super tasty.
Egg-fried rice with charred veg - Vegetarian, DF and GF
I was quite proud of how this turned out! I can confirm this is also good reheated for lunch the next day, if there's any left (which there may not be). The veg are cut and then seared quickly, then sauced and set aside. The cooked rice is fried, the egg is added to make a kind of eggy-rice-pancake. The whole thing takes about 15 minutes max, and it looks and tastes superb. I used capsicum, edamame beans, asparagus, spring onions and shanghai for the veg but you can change that up depending on what's in the fridge.
Pork and fennel twice - DF and GF
The photo is not my best work - apologies. Sometimes i wonder about having a "scratch'n'sniff" option on digital screens - this is very fragrant, the meat is tender: rolled in crushed fennel seeds, seared and then rested. The fennel bulb is cut into wedges, and braised in the frypan that held the pork. This is super simple, but works very well!
Salmon and pea risotto - DF and GF
As you probably know by now, risotto is my go-to thing. If i have a special ingredient i want to showcase, i couch it in or on risotto of some kind. In this case you could actually substitute asparagus for the peas, to make this a double Special Thing risotto. Risotto is very simple to make and this version is quite elegant, allowing those hero ingredients to sing.
