Asparagus and sorrel risotto - Vegan, DF and GF
Risotto is very simple to make and you can use it to showcase your favourite seasonal veg - this week it's asparagus! The sorrel and lemon in this version give loads of zing to contrast with the elegant asparagus...
Fiery chipotle fritters - vegan, Df and GF
These may sound a bit alarming, but the heat is in your hands - add as much or as little as you choose, but do add some as the chipotle in adobo sauce adds a delicious smokiness to the flavour as well as heat. The fritters are mostly grated broccoli and whole kernel corn, held together by chickpea flour and flavoured up with thyme and oregano as well as those chipotle peppers...
Roasted chickpeas with bulghur/buckwheat - vegan, DF and GF
The chickpeas are roasted with a bunch of aromatics: bayleaf, lemon, cumin and turmeric and more. While that's happening in the oven you prepare the buckwheat or bulghur (Just let me know which you'd like) with stock. Then you chop some parsley and fold it all together. Simple and delicious.
Green olive frittata - vegetarian, GF
The obvious ingredients are green olives and eggs, yes? But there's also cottage cheese, pine nuts, and a fistful of herbs: parsley, thyme and rosemary; also sauteed leek. So there's plenty of substance and loads of flavour... is a good shout. Just remember to use a frypan that can go in the oven (no wooden handles!).
Lamb shawarma - DF and GF
This is the definition of slow food: Marinade overnight if you can, in a rough paste made up of ginger, garlic, aromatic spices, vinegar and oil... then in the morning pop it in the slow cooker before you head out for the day. The results are meltingly tender and full of flavour! Serve with flatbreads and a bunch of side dishes for a Morrocan feast.
Chicken and cashew - DF and GF
This is a sublime dinner that is gently flavoured, has a great combination of textures and is very easy to eat! Water chestnuts and broccoli hide in there for additional crunch; there's tamari, honey, garlic and ginger and sesame oil in the sauce to deliver a fabulous depth of flavour... and it will take you about half an hour to pull together. Easy. And delicious.
