Kumara and chickpea curry with herbed rice - Vegan, DF and GF

I made this for dinner the other night and it was very flavoursome, so i thought you might enjoy it also. Kumara, red onion and chickpeas tossed in oil and some spices (flavour rather than heat), with veg stock and tomato paste and baked in the oven... while that's doing you cook some rice, then add in some shredded kale and parsley; take the lid off the kumara to reduce the liquid to a sauce that coats everything in flavour. Done. 

Honey garlic tofu - Vegan, DF and GF

The firm tofu is cubed, dusted with cornflour and baked crispy. You make a sauce with some honey, garlic and soy or tamari and if you're really lucky there will be fresh Asparagus from Dave the Asparagus guy to go with it. Thats about it really. It is crispy and delicious!

Eggplant, hazelnut and herb salad - Vegan, DF and GF

The eggplant is cubed and sauteed, the hazelnuts roughly chopped, the red onion finely chopped... there's a tasty sauce made from Cumin, honey, cider vinegar, lemon and garlic that is poured over the eggplant when is nearly tender to finish off the cooking and soak in... Stir through the other components very gently - there's parsley and mint in there as well - and enjoy.

Stuffed potato cakes - Vegan, DF and GF

These are fun to make and super tasty, handy for lunches as they are self-contained... You could stuff them with whatever you wish really, but this recipe has them stuffed with mushroom, onion, kale and capsicum along with garlic and some spices. Yum and Yum!

Braised chicken with roast veg - DF and GF

This was tasty and simple to make - great colours also - and all done in under half an hour! I roasted wedges of potato, red onion and capsicum; sauteed the chicken strips until just cooked then drizzled them with some dry sherry - you could use stock with a splash of cider vinegar - and popped into a baking dish, covered with foil and into the oven beside the roasties. Then i crisped up the shredded kale with some garlic and chilli flakes, and piled it all in together. 

Sticky short ribs - DF and GF

These are short ribs of beef and it's a slow cook - very simple to put together, then in the oven or slow cooker for as long as you can manage. The flavours are hoisin, rice wine, brown sugar and orange peel. These are messy and fabulous - have a finger bowl handy...
