I had a box of silken tofu in my fridge - a bit different from the firm tofu we get from Jia He, so a new experiment! I sauteed some leeks, cubed potato and pumpkin, then lifted those into a baking dish and broke the tofu into the frypan, seared that a bit, then added gochujang, tomato paste, and a little veg stock. Then  i piled all of that into the baking dish, mixed it gently through - the tofu was very tender - and popped it in the oven. The Braised tofu with winter veg worked out really well! A great mix of flavours and textures - the tofu was super tender and softened into the cubed veg a little... This one is vegan, DF and GF ( i found the GF gochujang!)

I'm not generally a fan of brown food, but this Lentil and mushroom stew is deeply satisfying so i will make an exception. The mash is parsnip and potato, so some interesting flavour contrasts going on and just generally great winter food. You can make the mash with non-dairy mylk and spread so this winter warmer can be Vegan, DF and GF. Also universally delicious. 

The white bean and kale soup is a bit of a middle eastern take on a Tuscan classic, which may not sound too promising but bear with me... Kale, cannelini beans, onion, capsicum, carrot, garlic, thyme, and then a little tahini and lemon to round out and sharpen up the flavour. You can take out a couple of cups of the cooked beans and blitz them then return to the pot for a creamy thickened base for the soup as a whole. The white bean and kale soup is Vegan, DF and GF.

Broken eggs! Yum. Cubed potatoes, capsicum, garlic and onion, some chorizo sauteed together as a base, then you make dips in this deliciousness with the back of a spoon and carefully crack an egg into each one, reduce the heat and cover til the egg whiltes are set and the yolks are done to your preferred level of wobbliness. This is a perfect brunch option, only takes a half hour to make. Yum, again. The broken eggs are vegetarian, DF and GF. 

Strips of pork belly, chunks of smoky bacon, some smoked paprika and tomato, strips of capsicum all baked with short rice in the oven - Arroz al Horno (baked rice with pork belly is easier to say) is a traditional Valencian dish kind of like paella but quicker and done in the oven rather than in the embers of a fire pit...  There are fresh herbs in there as well, and some white beans. I was surprised at how quickly it came together, and very happy with how tasty it is! The Baked rice with pork belly is DF and GF.

There seem to be a lot of capsicums this week! The Black pepper beef is a meal in one which is handy, takes about half to three quarters of an hour to make and is one of those "one foot in front of the other" meals - you do this then you do that, then you do this, then you have this very tasty dinner ready to eat. Perfect. Black pepper beef is dairy and gluten free.
