And the first of these is Gochujang glazed potatoes. I will track down gluten free gochujang for this - most brands have wheat based thickeners. I'll let you know if i can't find any obviously. The Gochujang glazed potatoes are vegan, dairy free and hopefully also Gluten free.
The Spiced roasted pumpkin with couscous works just as well with buckwheat for a gluten free version. The pumpkin is spread with a mix of olive oil, za'atar and chilli flakes before roasting; the couscous or buckwheat is cooked then has parsley mixed through; there's a zingy dressing wtih pomegranate molasses, garlic, lemon and grainy mustard... is a good time! This meal is vegan, dairy free and the buckwheat version is Gluten free.
This simple and satisfying soup has additional secret vegetable: Cauliflower (excellent source of vitamin K...) It's an easy half hour make and the grating of fresh nutmeg and grind of black pepper finish it off nicely. The potato, leek and cauliflower soup is vegan, dairy and gluten free.
This is a Matta Tofu - a tofu curry with cashews, tomato and peas. The spice blend features cumin, coriander, chilli and turmeric (Not too much chilli, i promise.) The cashews are softened and then blitzed to a creamy paste to make the basis of the gravy. Again, this is a half hour easy to make dinner, and is plenty substantial for a whole meal when served with rice or flatbread. The Matta Tofu is vegan, dairy and gluten free.
I had some potatoes and some yams, so i chopped them roughly, put them in a baking dish with some veg stock and lime juice, covered and baked it; then made a lamb mince ragu with mushrooms, leek and tomato paste, with some cavolo nero wilted in right at the end. The hash just broke down a little in cooking so no further pressure was applied! The Lamb with potato and yam hash is Dairy and gluten free ( the dot of labneh at the end was a good addition - will supply goats cheese for dairy free version on request...)
This chicken bake packs a lot of flavour - garlic, rosemary, anchovies, lemon, white wine or dry sherry - it's all going on! It will take less than an hour and is a bit flash but still straightforward to make. While you have the oven on you could make potato dauphin to complement the zing!
