
Kumara and leek braise with zesty mushroom topping - Vegan, DF and GF
This vegetable braise packs a lot of flavour - ginger, cumin and turmeric in the vegetable braise with the kumara, leek and garlic scapes; lemon and chilli flakes with the mushrooms. The perfect warm-up for a wintry night!
Lentil and kale soup - Vegan, DF and GF
You could actually eat this soup with a fork. There's onion, celery, carrot, garlic, red lentils and kale; cumin seeds, smoked paprika and chilli to liven things up. It will take just over half an hour to make and it's deeply satisfying.
Kung pao cauliflower - Can be Vegan, DF and GF
The Vegan and Gluten free status depend on the hoisin sauce used, so if needed let me know and i'll track down the GF hoisin for you. This is quick to make and delicious. It contains gochujaru (red pepper flakes) hoisin, tamari, garlic and ginger and cider vinegar. Also a small handful of cashews and some shredded spring onion (and cauliflower!)
Eggplant and black bean chilli - Vegan, DF and GF
The splok of sour cream on top is the only snag with the dairy free and vegan, and is just a serving suggestion really... This delivers a decent amount of heat - at your discretion - and good round flavour in only 20 minutes cook time, so it's a good midweek option!
Chicken and yam tortilla - can be DF and GF
i had some yellow yams from one of our growers, so i sliced them diagonally very thin, sauteed them along with charring the capsicum and wilting the fresh herbs (Onion weed and flatleaf). I dredged the chicken strips in smoked paprika and flour - chickpea flour will make this super crispy - and i softened the tortilla by using them as a lid while the chicken and veg cooked together for a bit. Yum and Yum.
Cumin Lamb - DF and GF
This is from Kenji Lopez-Alt's "The Wok" - it may feel a bit complicated but there are transferable skills here that are really useful! It will take about three-quarters of an hour and deliver excellent results: tender spicy chunks of lamb, chunky vegetable strips also super tender - serve with some basmati rice and enjoy..!
