Braised tofu - Vegan, Df and GF

This recipe comes from a book called Korean Vegan - great flavours everywhere in there! The tofu is cut into strips, then seared. A soy/garlic dressing is added to the pan and heat reduced so that the sauce soaks up. There are finely diced veg added and left to steam with the tofu as it cooks slowly. It's simple, quick and delicious!

Pumpkin satay soup - Vegan, DF and GF

Pumpkin soup is a standard, so it's nice to change it up every now and then. This version is thickened with potato (standard) and stacked with ginger, garlic and peanut butter for a satay twist, smoothed down with coconut milk. Feel free to add chilli...

Mushroom and water chestnut stirfry - Vegan, DF and GF

I really like the delicate flavour and satisfying crunch of water chestnuts! There is plenty of flavour in this stir fry / soup-to-eat-with-fork - once again, ginger, garlic, chilli; also tamari, oyster sauce (i'll send a GF one if needed), pepper, vinegar, a pinch of sugar and some flatleaf. It's super quick to make, great with rice or flatbread...

Savoury flapjacks - vegetarian, can be GF

I worked out a GF version of these, so just request the one you would prefer. These are kind of a savoury cheesy muesli slice. They have red onion and grated apple, celery seeds and fennel seeds, grated cheese, chopped walnuts and a couple of eggs... very handy for lunches or picnics (or sports sidelines). 

Chicken rogan josh - DF and GF

This is rather elegant but simple to make. It will take about 45 minutes but 30 minutes of that is simmering gently while you do something else... The sauce is enriched and thickened with ground almonds and the flavours are subtle and complex - well rounded by the simmering! It uses boneless chicken thigh pieces, onion, garlic, tomato, some fresh chilli...

Lamb with potato and yam hash - DF and GF

This is a dinner of two halves... the potato and yam hash bakes in the oven with lime juice, minced ginger and some veg stock. While that's going on, there's onion and garlic in a frypan, then lamb mince, then mushrooms, then some spices, tomato paste and some water  - that simmers for a bit, then some leafy greens are added to wilt down; serve together... Is a good contrast of clean bright flavours from the hash, and smoky deliciousness from the lamb.Yum.
