
Four vegans, six gluten free and six dairy free ... recipes for the week starting 26th July

Charred brassica and hazelnut salad - Vegan, DF and GF
Florets of charred cauliflower and broccoli with toasted hazelnuts, and a tangy nutty dressing, finished off with creamy avocado. Hmmm. This is very quick to make - will take you about 20 minutes from Go to Woah...Flavours are warm and mild.
Accidental Potato and Yam soup - Vegan, DF and GF
I simmered the potato and yams in miso broth then mashed them lightly to thicken the soup. Added some peanut butter, some onionweed (cos i have a LOT) but you could use spring onion or garlic shoots, minced fresh ginger and some shredded Wong Bok (chinese cabbage), then a small splash of tamari. The soup was really good: Big flavour, plenty of substance, contrasting textures...Lots to love.
Mung Dhal Pancakes / Bindaetteok - Vegan* , DF and GF
*Instructions for a vegan egg replacement are included in the recipe - let me know if you want ingredients for this. Mung dhal is the lentil-like split insides of mung beans; works just like a lentil. Mung sprouts are also in here, along with some kimchi, mushrooms, sring onions and garlic...This is Very Interesting (in a good way), substantial and really tasty.
Tofu, pea and cashew curry - Vegan, DF and GF
This one has all the colours - have it with rice or flatbread and dinner is sorted! The cashews are softened in boiling water then blitzed to a smooth paste to make a creamy sauce. There's tomato and a fistful of frozen peas, some warm spices (cumin, coriander, turmeric, a pinch of chilli) - it's very simple to make!
Black pepper beef - DF and GF
This is a pretty simple stirfry but it's really good. The steak is marinaded in a slurry of garlic, ginger, soy, black pepper and cornflour, so when you sear it all those flavours get locked in! Potato and kumara are parboiled then crisped up in a pan, there's onion and capsicum, the beef and more of the marinade to make a light coating of peppery sauce. Yum and Yum.
Spicy pork and broccoli - DF and GF
I sneaked extra nutrition into the rice by adding red lentils and a bit of quinoa...The pork and broccoli are so quick you need to start the rice first... then scorch the broccoli (cut into little batons), then the pork and spices and then soy/tamari, brown or coconut sugar, spices and some chilli to simmer down to a sticky coating - add the broccoli back in and coat, done! You probably don't even need a recipe now, thats really all there is to it.
