Leftover cooked poultry? Here's the plan...

We had leftover cooked chicken in the fridge - this is a scenario you may be familiar with at this time of year. We had cauliflower, and some curiosity... Would slabs of cauliflower work instead of lasagna sheets, for a lighter gluten-free lasagna?

I cut thin slices through the middle of the little cauliflower (from Rodney's garden) and poached them gently in some vegetable stock. Then I lifted them out carefully and sent them aside. 

I cooked onion, chicken, mushroom, garlic shoots and possibly spinach, and loosened it up with some of the stock I'd cooked the cauliflower slices in.

And then I made a white sauce using the rest of the stock, a little milk and some cornflour, and grated some cheese....

Then I layered it up leaving the white sauce until the end; so chicken, cauliflower, chicken, cauliflower and then white sauce, and then grated cheese. 

It cooked really quickly, because of course all of the components were already cooked... Was very yum. 

So having  tested the hypothesis I can categorically state that yes, you CAN use slabs of cauliflower instead of lasagna sheets. It was highly likely, but worth trying so we could eat it. The eggplant instead of chicken version is also very good....
