Kashmiri vegetable curry - Vegan, DF and GF

This vegetable curry will take about half to three quarters of an hour, and is a steady step by step process - nothing is rushed! Has seasonal vege - so if there are vegetables that you know will work for your family, use those... the recipe is not precious about this. The spices are aromatic rather than hot - you can add as much or as little (or none) of the fresh chilli as you choose!

Eggplant, hazelnut and herb salad - Vegan, DF and GF

This is super quick - 20 minutes or less. the egplant is cubed, sauteed until soft and golden, and then flavoured up  with spices and honey and cider vinegar... hazelnuts are toasted and roughly chopped, there's red onion, parsley and mint. Tender, crunchy, full of flavour! Also good for lunches the next day...

Braised fennel with saffron - Vegan, DF and GF

This was part of a family feast and worked well in that context. Again, simple - you braise the fennel wedges in saffron water until the liquid is largely reduced ... Very good though! Once the fennel is cooked to perfection it's layered on a bed of harissa - for a surprise when you spoon it onto your plate...

Pumpkin lasagna - Vegetarian only

I did try to slice the pumpkin with a mandolin, but i've sliced my fingers with one of those before, and was being too cautious to be effective... so i just used a knife and it worked fine! Very thin slices of pumpkin (or squash like buttercup) layered with lasanga sheets and cream/parmesan... Bake covered for a bit, then uncovered for a bit. There's a pasta sauce and vegetable stock added before baking. This was pretty simple to make, and looks impressive! (tastes great also...)

Chicken with coconut rice - DF and GF

There are secret vegetables in this one, so it's an all-in-one traybake which makes midweek dinner  easier...Possibly the hardest thing about it is finding chicken pieces with skin on and bone in! Has buttercup squash, cauliflower, garlic, ginger and onion, fresh coriander and lime... 

Seared pork fillet with charred brassica salad - DF and GF (has peanuts)

There's a bit of a recurring theme here: cauliflower, broccoli and hazelnuts charred in turn in some sesame oil; pork fillets rolled in Moroccan spices then seared...the dressing has peanut butter, dijon mustard, lime, tamari, more sesame oil and pepper... All up it will only take you about 20 minutes!
