Cauliflower and leek frittata makes great use of seasonal veg and it’s very straightforward. It has toasted seeds on top (with or without cheese, depending on your dietary needs) to give it a nutty crunch at the finish. Vegetarian, GF
First you make a vege-ful sauce with mushroom and leek, then you add the lemon, then you pour this over the fish, cover it (or not if you want a caramelised finish on top) and bake… Fish bake with leek, mushroom and lemon - DF and can be GF
And finally, an Ethiopian lamb curry with whole spices and ground spices, kumara, tomato and dates for depth and substance! This one is very good. DF and GF
