Turmeric and Kale Laksa - vegan, DF and GF

The laksa is mild on heat and full of flavour - this one has button mushrooms, as well as kale, carrots, ginger and fresh turmeric and a fistful of rice noodles... It's creamy and delicious.

'Fried chicken' jackfruit - Vegan, DF and GF

I'm not going to make the bold claim that you won't be able to tell this from KFC. However, it is crispy and spiced up, and the texture is really good. If you use nut mylk for the batter this is vegan, and the coating is a mix of chickpea flour (One of my favourite things) and 11 secret herbs and spices (i just counted them). It's surprising just how good this is! Jackfruit is a lot of fun to experiment with...

Pearl couscous with greens and mushroom - Vegan, DF 

Pearl Couscous, giant couscous, Israeli couscous, fregola... i think fregola is my favourite name for this stuff! Small round pasta, so no good for Gluten-free. However, buckwheat groats will give you the same size, and similar texture with a mild nutty flavour. (Let me know if you want this sub). Little brown button mushrooms, leafy greens, red onion and some veg stock. This is super simple - if you have people who riot at the thought of mushrooms, sub in some bacon chunks...

Carrot and chickpea satay - vegan , DF and GF

More fresh turmeric in this one, and fresh ginger, chopped tomato, peanut butter, carrots and chickpeas, some coconut milk... it's a substantial thing - sturdier than a soup! The carrots are sliced and roasted then added to the satay at the end, along with the chickpeas so there's good chunky texture in there. You could serve it with rice or good bread... might be interesting poured over baked and split potatoes!

Salmon and corn soup - DF and GF

This is super quick and a bit flash - very handy when you have someone coming over for dinner!  The stock base is made from white miso, the corn comes in a tin (Creamed corn). Sharpen it up with some lime juice, there are green olives in there as well  - it's a very interesting flavour profile! Super tasty and it will honestly only take 20 minutes to pull together...

Chungking pork stirfry - DF and GF

I had a spare chunk of belly pork so i was hunting for a pork recipe, found this one (Our friend Kenji Lopez-Alt again). You marinade the pork for a bit, so effectively you do that prep then just do the rest of the chopping and slicing, get the rice cooking, and then you're good to go with the stirfry.I made this with leeks and onionweed tops... It has dry fermented black beans in the sauce which gives it a really savoury kick!
