Mushroom Teok Bokki - Vegan, DF and GF

I experimented with these disc-shaped rice cakes to make a Korean dish called Teok Bokki - made it with pork and also with mushroom. When i went back to get the rice cakes for recipe orders the lady behind the counter asked what i was making. When i told her she assured me i was buying the WRONG SHAPE, and showed me which ones to get. I really appreciate this when making food i'm not familiar with! The spicy rice cake stew has our friends gochujang and gochujaru, miso stock, tamari, garlic and tahini... also buttercup squash and mushrooms. Is very yum and you can easily adjust the heat without losing out on flavour.

Kale and chickpea spread - Vegan, DF and GF

There are a couple of less conventional recipes in this week's list and this is one of them. It is very versatile and tasty, so i am not sorry. You could make a batch of this for lunches, take with you to shared meals, have it for snacks after school or work. It has kale and carrot, chickpeas and parsley, spring onions and tahini, mustard, some spices, some lemon... It's super easy to make. 

 

Eggplant and Blackbean chilli - Vegan, DF and GF

The chilli only takes about 20 minutes to make and you can serve it with rice, corn chips, tortilla or poured over split baked potatoes... it is a good shout whichever way you decide to have it! Cubed and sauteed eggplant, loads of flavour with garlic, thyme, tomato and cumin; as much heat as you want with fresh chilli (seeds in or out, and as much of that chilli as you want to add...) If you go for baked potato as the base that's what will take the time...

Savoury Muesli slice - Vegetarian only

This is SO tasty! I've been considering GF alternatives, and i reckon it would work with a mix of quinoa (for stickability) and buckwheat groats (for texture and bite). For the rest of us it has rolled oats, with grated apple and cheese, chopped walnuts and red onion, some eggs and some melted butter. Dairy subs might be a mix of pecorino and soft goat or sheep's cheese for the grated cheese, and oil for the butter (or melted non-dairy spread). Let me know! The slice is very good warm or cold, is perfect for lunches, picnics, finger food shared plates etc. Would be good for dinner with a salad...

Teok Bokki with Pork belly - DF and GF

This is the same as the mushroom one, but with pork belly instead... The Correct Shape for the rice cakes?  A small cylinder 1cm or so long. Gives the stew a great texture but otherwise the same...

Chicken Rogan Josh - DF and GF

Lamb Rogan Josh is one of my go-to options at an Indian takeaway; chicken rogan josh seems a bit counter-intuitive. But trust me, it's very good! The flavour profile is complex and as ever, you control the level of heat by how much of that fresh chilli you chop in and whether you leave the seeds in or not. Surprisingly quick to make for a meal with such depth of flavour... (takes about 45 minutes)
