Broccoli and deepfried tofu stir fry - Vegan, DF and GF

This will take about as long to make as the accompanying rice will take to cook - maybe 20 minutes. The sauce has depth and stacks of flavour: rice wine, stock, tamari, black bean sauce, vinegar, sesame and some sugar to balance up the sharpness and saltiness. Yum and Yum.

Dry pea and potato curry - Vegan, DF and GF

I remember walking into our local dairy in Welington and there were delicious smells coming from the room at the back... The lady told me she was making dry pea and potato curry; has been a family favourite ever since. The photographed version has florets of cauliflower added as well - a good shout i reckon. This is a fragrant curry rather than a hot one, very accessible flavours.

Kumara and chickpea salad - Vegan, DF and GF

This salad is substantial enough to work as a main meal and is as quick as cooking small cubes of kumara (maybe 15-20 minutes). Peel and cube the kumara, saute until soft and golden around the edges - caramelisation is our friend. While that's happening drain and rinse and drain the chickpeas, finely chop a red onion and a fistful of parsley; mince some garlic. Combine with cooked kumara. Add lemon zest and juice. There you go. There are also some red pepper flakes (gochujang), cumin and sesame seeds. 

Corn Cakes - Vegetarian, can be DF and GF

  In order for these to be DF and GF we sub goat's cheese for feta, and besan for flour. Easy. These are great for afternoon treats, taking for a shared meal or lunchboxes! There's corn (obviously) and loads of flavours: garlic, cumin, fennel and celery seeds, tarragon. All of that is held together with a batter made from butter (or spread), eggs, baking powder and flour (or besan), then topped off with either goat's cheese or feta. The egg whites are whipped separately and folded in making the corn cakes super light. 

Papardelle with buttered leeks and chorizo - none of the things!

I'm sure we can come up with suitable substitutions that would work for this, so please let me know... As well as the leeks  - softened in the butter - there are cauliflower florets blanched and then added to the leeks; chopped capsicum, chorizo, lemon juice and cubed feta also added to the leeks... while this is becoming super delicious in the frypan, cook the pasta, drain and then gently stir in the frypan deliciousness. It will only take you about 20 minutes to make. Promise!

Sicilian Meetloaf - DF and GF

Think "meatloaf meets sponge roll"... the meatloaf mixture is patted out into a rectangle, then you spread a cooked-down mix of garlic, onion and kale with optional grated cheese over most of the rectangle, leaving the edges clear. Then you roll it up as tightly as you can, and bake it seam-side down. Make a tomato-y sauce to go with it. The Sicilian meatloaf takes a while to bake in the oven - about three-quarters of an hour - but you can be doing something else while that happens! This is a very appealing dinner!
