Recipes for the first week in December. Apparently this is the season to be jolly...

Well and here's a good reason: fresh broadbeans! With buckwheat, walnuts, crispy radishes, spring onions, a zingy vinaigrette... The Buckwheat and broad bean salad is a very good time, also Vegan, DF and GF

This is a vegan take on pulled pork tortilla - Jackfruit is marinaded in cider vinegar, maple syrup, tomato and brown sugar then simmered with some sautéed red onion.... make a quick salad with strips of carrot, cos lettuce and some more red onion, slice up an avocado, toast some tortilla in a dry pan and you're all set to go... Vegan, DF and GF (Corn tortilla provided as needed) Jackfruit Tortilla

Spiced rice with asparagus and Bok Choi  is pretty quick to make and loaded with aromatics : Cardamom, bayleaf, cloves, five spice, sesame...the greens are a fresh and delicious contrast to the full flavours in the rice, is a very good combo... this one is also Vegan, DF and GF

This is Roasted portobellos with breadcrumb salsa. The Crispy crumb salsa (Red onion, fistfuls of fresh herbs, olive oil + crunchy breadcrumbs) is the perfect friend for the tender slabs of roasted portobello mushroom. Thats it really. So simple. Vegan, DF and GF depending on the bread you crumb...

Chicken noodle soup? Don't mind if I do... this one is actually Chicken dumpling noodle soup but that's starting to sound a bit like Dr Seuss so we'll just stop there. The Dumplings are torpedo-shaped - quite fun to make and nifty - there's a heap of aromatics (ginger and garlic and sesame in the dumplings, ginger and garlic with a splash of sriracha in the soup...)and it's very quick to pull together but plenty substantial for an evening meal. Chicken soup in any form is profoundly comfort food I think. This one certainly ticks that box! Is DF and GF if you opt for rice noodles instead of udon.

When I made this one I was missing a key ingredient for the mojo verde so I subbed asparagus (Because why? Asparagus!) and it actually works really well so we'll just leave it in! This one looks very festive - might add it to the Christmas box menu...Onion, capsicum and Kumara roasted together; lamb marinaded in olive oil and cumin then seared, and then added on top of the veg for a final 10 minutes roasting time... the mojo verde is a flavour blast of fresh coriander, garlic, asparagus, vinegar and olive oil. The Lamb chops and roast veg with mojo verde is DF and GF and quick and delicious.
