This dish of roast winter veg is full of colour and flavour - has halloumi or tofu as you prefer, and cashews. It's very simple, with the veg added in layers. Can be Vegan (tofu option) DF and GF

Yes, it's pumpkin soup, but it has a satay twist which makes it just a bit more interesting. With ginger, peanut butter, coconut milk, chilli.... Pumpkin Satay soup  - vegan, DF and GF

Handily, the Lentil and coconut dahl uses up the other half tin of coconut milk. There's a complex blend of spices in this, giving it warmth and a well-rounded flavour. The various tasks for this one stack inside each other quite neatly, so it is still straightforward! Also ideal for cold winter nights... Vegan, DF and GF

The next recipe is waiting for a photo - sorry - but it's for Parsley and parmesan pikelets with Pumpkin hash. This is a very satisfying meal, very accessible ... Who doesn't like pikelets after all... the pumpkin hash has onion and rosemary, and the pumpkin caramelises in a slow pan... Vegetarian only

Hiding under this very appealing crispy mash topping is a smoked fish pie. It has all the veg you need, so it's a meal in one: onion, carrot, celery, corn... the filling is creamy and delicious, the topping is crispy and delicious... if there is any left, it does well for lunch the next day!  

This photo is not very good, but the food definitely is! This is a spiced lamb kebab with tomato gravy - the lamb kebab has pine nuts, allspice, nutmeg and cinnamon, feta and breadcrumbs added, the tomato gravy has cumin and a bit of chilli heat. Again, it's not complicated to make, and the flavours are deep and warm...
