
Cinnamon roasted pumpkin with sriracha yoghurt - Vegetarian/Vegan, GF (can be DF)
Swapping the yoghurt with coconut yoghurt will make this both dairy free and vegan. It's quite an elegant dish, has a coriander pesto a well as the sriracha yoghurt, and the pumpkin seeds are toasted, so there are crunchy and silky textures, spicy and green flavours... It's really very good! And looks impressive also.
Chickpea and spinach curry - Vegan, DF and GF
I was experimenting with what i had to hand ... soaked the chickpeas and cooked them with garlic and bayleaf, some peppercorns. Sauteed red onion and whole smashed garlic cloves, added spices then chickpeas (drained), then coconut milk, then chopped spinach...Then i just left it to do its thing. It was very flavoursome, satisfying textures, and the lemon and parsley rice was a good companion...
Dry pea and potato curry - Vegan, DF and GF
There are a lot of spices in this curry! It's not one that requires slow cooking, so you can have this ready to eat in half an hour. It's very accessible (peas and potatoes!) and the spices are aromatic rather than hot. There is a lot to love here...
Corn cakes - Vegetarian, GF and can be DF
These wee cuties are a fancy take on savoury muffins! They use whole kernel corn, there's garlic, fennel seeds, cumin, celery seeds, tarragon and red onion as well as cubed feta - you could sub in goats cheese to make these dairy free. I'd make them in texas muffin tins to get a large lunch component. Or use a standard muffin tin and have two...
Chungking pork - DF and GF
This dish has BIG flavours! Soy (tamari), Shaoxing wine or sherry, fermented black beans, hoisin, gochujaru (Korean red pepper flakes), ginger, garlic, leeks and spring onions! It's not complicated and the resulting flavours are rich and layered... Yum and Yum.
Slow Chicken - DF and GF
I cooked this on top of the woodburner - in a tagine. A pottery casserole in the oven would work just fine, but it's good to give it time. The chicken is seared in a frypan that's had onion and garlic in it, also thinly sliced potatoes and mushrooms roughly chopped. Tomato paste that's been thinned with a cup of water goes in after the chopped spinach, and then it all just does its thing ina. medium hot space - on top of the wood burner or in the oven. The chicken was fabulously tender and the flavours deep and smooth. Very good!
