
Crispy butterbeans with herbed rice - Vegan, DF and GF
I really likke the way the butterbeans go crispy on the outside, and light and fluffy inside...there are spices in the rice (cloves and peppercorns) and with the beans (cumin and turmeric)... so there are contrasting flavours and textures abounding...
Fried chicken-style jackfruit - DF and GF
The crispy coating is made with chickpea flour and a secret blend of spices (there are 11 of them...). This is quick to make (about 30 minutes) and fun to eat... It is not chicken, but it is very good jackfruit!
Kumara and carrot cakes - Vegan, DF and GF

The spice blend has coriander, cumin, turmeric and salt. The coating is chickpea flour again, this time the finished cakes are rolled in a mix of black and white sesame seeds before being shallow fried. The cream is made with those sunflower seeds above...is surprisingly easy and very yum.
Spinach and mushroom risotto - Vegan, DF and GF
Swiss brown mushrooms in largish chunks, tomato passata, red onion, mixed herb salt and a bit of lemon pepper (or you could use vege stock) and spinach. That's it really. And water! Tasty and quick and easy...
Salmon and corn soup - DF and GF
This has a lot of very tasty things in it! Leeks, garlic and ginger, creamed corn, miso, lemon, green olives minced, and salmon also minced... It uses a small amount of fresh salmon for a big flavour ...
Pork fillet and Pak choi - DF and GF
If you look closely you can see that i finished this off on top of my woodburner, which always makes me feel a bit smug... We had some great pak choi from Waewae permaculture this week, and for this dish i mostly used the stems with just a little of the green tops - kept the rest of those for later! There are some Agria potatoes (yes, from Caithness Farm) cut into batons, red onion and portobello mushrooms, a splash of tomato puree... the pork fillet was simply sliced on a diagonal then seared, then everything went back in and it went on the woodburner. Too easy. An oven will work just as well!
