Noodle and Edamame salad - Vegan, DF and GF

The recipe calls for soba noodles, but a quick substitution of thin rice noodles makes this gluten free. The salad has shelled edamame beans, shredded coconut, avocado and spring onions, dressed with soy, honey, ginger, lime and chilli. There are toasted pumpkin seeds in there for additional crunch...

Red rice and mushroom - Vegan, DF and GF

This is a half hour, one dish wonder: red rice, toasted kale strips, sauteed mushrooms aromatic with rosemary; then there are nuts, cranberries and lemon. It's substantial enough for dinner, and light and tasty enough for summer. You never know when you'll need one of these!

Crispy courgette strips with fennel hummus - Vegetarian, DF and GF (if you use GF breadcrumbs)

The courgette strips are also speedy and delicious! The sticks of courgette are dusted with cornflour then dipped in beaten egg and dredged in coarse breadcrumbs. The hummus has fennel fronds, lemon, tahini and of course chickpeas... this one also will only take half an hour to pull together, and you could  make the hummus ahead of time to be even speedier!

Sweetcorn, lime and chilli fritters - Vegetarian, DF and GF

As well as the ingredients in the title, there are spring onions, an egg and a small amount of chickpea flour. There's a lot of vegetable and not much holding them together! The grated lime zest on the fritter mix makes them super fragrant and they're very light. Can attest also to them being very good re-heated for lunch the next day...

Potato, courgette and smoked salmon salad - DF and GF

And again with the half hour meal making! If you have access to any, the runner beans sliced narrow and angled are great here, but they are hard to find. (I found a couple of renegade plants where i've grown them in previous years, so you never know!) If you're cooking potatoes on another day just cook extras, and then this meal will be even faster. Courgettes, thin slices of smoked salmon, a dijon vinaigrette... light and a bit special! You don't need very much salmon to make plenty of impact here.

Pork with thyme salt, crispy potatoes and ratatouille - DF and GF

Again, i made this for dinner the other night and then realised that it was pretty good and an easy one to replicate. By then i had eaten it so i had to make it again for photographs... and eating.

I blitzed some sea salt and dried thyme to make the thyme salt, then rubbed that into the faces of the steak. Crushed the cooked potato wedges a little, and crisped them up in the frypan then lifted them out. Seared the pork steak on both sides then lifted that out. Made the ratatouille, then sat the pork on top and finished it off under cover.
