Tomatoes stuffed with Rice - Vegan, DF and GF

This is super simple, summery and delicious. The rice is soaked in the tomato innards blitzed up with basil, garlic and olive oil. After an hour soaking, the rice mix is stuffed back into the tomato carcasses and baked. It's that simple. 

Mixed mushrooms and beans over potato and kohlrabi - vegan, DF and GF

This is me experimenting with the oyster mushrooms... the thick slices of potato and kohlrabi make a great base for this super tasty mix of oyster and swiss brown mushrooms, and either edamame or broad beans(shelled).This was quick to make and very good to eat...

Spicy kale and puy lentil tabouleh - Vegan, DF and GF (Buckwheat instead of bulghur)

This is one of those Russian Doll recipes - one thing fits inside the previous one in terms of time... Bulghur (or buckwheat groats) and the lentils cooking at the same time, and then while that's happening the kale is sauteed and steamed... Everything into a large bowl - whole cumin and ground cumin, shredded chilli, lemon and pumpkin seeds, finished off with a crumble of goats cheese or feta. Yum!

 

 

Cashew and Kumuara Saag - Vegan, DF (Sub coconut yoghurt) and GF

the Kumara is cut into chunks and roasted. While that happens the saag is put together: onions caramelised, spices added, spinach (the recipe suggests frozen to speed things up) in, and then the raw cashews and leave it to bubble gently for a bit. Add the kumara chunks and stir gently; toast some shredded coconut carefully! Add some yoghurt (dairy or coconut) and stir through, then serve with the toasted coconut on top. 

Flattened pork fillet - DF and GF

This is not flattened like schnitzel; you gently flatten it without smashing the fibres of the meat... then marinade it in rosemary and garlic with oil and lemon. The pork is seared/cooked as you would a steak - cos that is how thick it will be by now - and the courgette added in at the end to char and caramelise. Done!


Peach Salad with chilli and chicken - DF and GF

Sounds unlikely? There's also a splash of lime (juice and kaffir leaves), tomatoes, mint, coriander and crispy shallots. Light, fresh and a bit spiky in the nicest possible way..
