Besan polenta sticks - Vegan, DF and GF

You need to work ahead for this, making and setting the chickpea flour polenta 3-4 hours before you want to make dinner. (or the night before...)The courgette and tomato stew is simple, summery and gives the polenta sticks all the flavour they need. 

Roasted red pepper and chickpea dip - Vegan, DF and GF

I guess the thing that makes this NOT hummus is the absence of tahini. This is super simple - roast chopped red pepper and red onion with some spices, mash the chickpeas, blitz the pepper and onion mix (and  the delicious juices from the roasting) and stir through together. Check seasoning. The thing is, it is REALLY good. Creamy, light, full of flavour. It makes for great in-between snacks with some toasted bread, veg sticks or crackers ... just sayin'

Spicy Korean tofu - Vegan, DF and GF

There are some technical tricks in here that will serve you well every time you want crispy fried tofu! Again, this will only take you about half an hour from start to finish; fit the cooking of rice and a dazzling quick veg stir fry in around the simmering of tofu in sauce...  The sauce is flavour rather than heat: gochujaru, garlic, sesame, tamari.  Yum and crispy yum.

Broccoli and potato stackers - Vegetarian, DF and GF

So crispy! Chunky and roughly broken up lightly-cooked potato, crisp-tender broccoli cooled and chopped, mixed with egg, freshly grated nutmeg and some grated lemon rind, finely chopped spring onions. These only just hold together, and the bits that break off are very tasty prizes for cooking...

Jamaican chicken with peach and avocado salsa - DF and GF

All of this sensational flavour/texture/look will only take you about 20-30 minutes to pull together!  Is very good. The drumsticks are rubbed with a jerk spice rub and roasted while you make the salsa...Some flat bread or a good potato salad and you're all set.

Cumin-crumbed fish in summer salad - DF and GF (if you use GF crumb)

The salad is an assembly of the usual suspects: salad leaf, tomato, avocado, red onion. Dredge the chunks of fish in a crisp crumb that's spiced up with cumin and smoked paprika. Dress the salad with a mix that's livened up with lime juice and fresh chilli. Compile. The quality of the fish is very important here. You don't need much, but it needs to be super fresh to make the salad sing...
