Red quinoa, corn and bean salad - Vegan, DF and GF

This took about 20 minutes to make and is plenty substantial for a meal on its own. All of the colours in there... the corn and beans are sauteed with some garlic and lemon juice, then steamed with a little water to crisp-tender; cherry tomatoes quartered... The red quinoa has a nuttier taste. 

Hokkien noodle stir fry - Vegan, DF and GF (substitute rice noodles for the hokkien)

There is a stack of veg in here: red onion, courgette, celery, chilli, tomato and coriander leaf. The flavours are amped up with sesame oil, rice wine vinegar and pomegranate molasses... This will only take you 15 minutes to pull together.

Beetroot and sunflower seed salad - Vegan, DF and GF

There's optional feta in here, which we can sub with goat's cheese to make it dairy free...fresh new season beetroot are just in at the market so i thought i'd make the most of them... The dressing is simple and just right: honey, white wine vinegar, olive oil and garlic.

Chilli corn pikelets - Vegetarian, DF and GF

Again, there's a stack of secret veg in here - the corn is not very secret but the finely chopped chilli, grated courgette and diced capsicum are less obvious. There's smoked paprika as well and some cayenne if you want to ramp up the heat...

Japanese golden curry with schnitzel cut beef - DF only

The beauty of this was its simplicity, thanks to the pre-made Japanese curry blocks. Sadly these are not gluten free. I will see if I can find the recommended GF alternative curry powder, but you will then have to make a roux first - just adds a couple of steps. I added broccoli and courgette as well as onion and potato because thats what was in my fridge. Was great!

Smoky chicken and courgette strips - DF and GF

Strips of chicken thigh dredged in chickpea flour/smoked paprika/salt, fried til golden on one side then flipped; batons of courgette added to the pan to soften, then chopped tomatoes added to loosen things up a bit. This is super simple, serve it with a salad, some pickles, and some good bread. It will only take you 20 minutes - fast food chicken!
