Leek, egg and lemon soup - Vegan/vegetarian, DF and GF
It feels like good weather for a thick and creamy soup today. At this time of the year, it's hard to know when soup is going to be welcome! The soup is a version of the Greek egg and lemon soup but you can omit the egg and have the vegan version - still delicious. The egg is added to a cup of the cooled soup towards the end of making, then gradually whisked through the rest of the soup to make a rich and slightly custard-y consistency.
Kumara and chard curry - Vegan, DF and GF
Kumara, garlic, tomato, spices (coriander, cumin, turmeric), chilli to taste, coconut milk and chard or spinach. Seems pretty simple, is certainly quick (half an hour or so), satisfying and delicious... Going for a big swim for a school holiday outing? This will be just the thing afterwards!
Satay tofu sticks - Vegan, DF and GF
These are super quick - about 15 minutes - and really yum. The satay sauce is a combo of soy or tamari, maple syrup or honey, peanut butter (chunky or smooth, your choice) and sriracha. Simple and effective! The asparagus is a serving suggestion only - it's a bit early for our Local asparagus guy yet i'm sorry!
Parmesan (Pecorino) potato stacks - vegetarian, DF (pecorino option) and GF
These are a great school holiday project - thinly sliced potato stacked in muffin trays with heaps of flavour from rosemary, parmesan, our old friend gochujaru, salt and pepper. (and some melted butter or olive oil). They're great for lunch, for a snack while watching a movie, with a salad for dinner or as a side...
Braised chicken with mushrooms - DF and GF
Actually, those potato stacks would go really well with this chicken... Alternatively, the recipe gives a mix of red and brown rice as a serving suggestion. The chicken is simply braised with flavour from garlic, bayleaves and peppercorns, tamari and cider vinegar. The mushrooms are cooked separately then added at the end. This take a little longer - maybe 45 minutes - but it's one of those things you start, go and do something else for a bit, come back and check, go away again. Very Yum.
Beef and broccoli with ramen (or rice noodles) - DF and GF
There's a reason this is so universally well loved. It's very very good! The beef is marinaded in oyster sauce, sesame oil and cornflour; broccoli is blanched, noodles are cooked in the broccoli water. Heat some oil, sizzle onion and garlic, then add the beef, then add the broccoli, then sauce it up a bit with some of the cooking water if needed. Serve over the noodles. See?! So simple, so tasty. I reckon you could have this on the table inside of half an hour easily.
