Ingredients

1 c wholemeal flour

1 tsp baking soda

1 tsp cinnamon

1 c currants

1 c brown or raw sugar

1 ½ c grated carrot

½ c oil

2 eggs
Directions
Mix together the flour, baking soda and cinnamon.
Add the currants, sugar and grated carrot.
In a separate bowl, beat the oil and eggs.
Mix the oil/egg and the dry ingredients together thoroughly
Bake in a greased tin @ 350C for 40 minutes.

This is great hot with custard, cold with yoghurt, or just plain. I very seldom bother with icing...
