These are ingredients for the Green Soup - broccoli, cashews, onions, ginger and fistfuls of other green things... kale, parsley, spinach, nettles... whatever you can find really! The cashews make it very creamy and more-ish. This is what it looks like in the end:

I have a friend who uses them as her go-to for shared finger food occasions... carrots feature as well as the red lentils, and cooking them in coconut oil makes them super crispy (chickpea flour also contributes to this).
I believe I mentioned earlier that risotto is my favourite fast food! One of the things I love about it is how easy it is to change it up: this version is Leek, mushroom and lemon risotto... Makes the most of seasonal food and it's a great combination of flavours. Yum.
The non-vegetarian recipes this week are also very tasty: first up,
a Teriyaki Salmon rice bowl. I confess, this is a "Serving Suggestion" photo, and I'll upload a real one later in the week! It features brown rice, great avocados, salad leaf, and a smoky paprika mayo. Can recommend!
