This is another great comfort food option as the weather turns autumnal! (I have been known to make this and pack it into 1 litre milk cartons for freezing...). Potato and Courgette soup sounds very bland, but in fact the tarragon gives it a great flavour lift - it's delicate for sure but very delicious. Vegan, DF and GF
This is a bit sneaky, but this week there are two versions of the same thing - this is the vegetarian or vegan version - omit egg at the end for vegan! This version has eggplant, red onion, and assorted other veg: Cauliflower, mushrooms, capsicum, chard, and grated kumara to give it body. It's very good to be able to include egg recipes again! This is a Malaysian Egg Curry - hot and sour (Chilli and tamarind) with loads of aromatics (garlic, ginger, coriander) and spices (cumin, coriander, turmeric...). Thats pretty much it really...only takes about half an hour to make and is very satisfying to eat! Vegetarian, DF and GF.
If this picture seems familiar, that because - sneaky. This is the meatarian version of the Peru Hotpot. Beef mince replaces the eggplant, the flavours and other veg remain as delicious as ever. Eggs on top for an extra hit of protein and creaminess as you fork it through the rest of the dish. Yum. DF and GF.
And finally a very yellow summery fish chowder - Potato and pumpkin, corn, fresh ginger and chilli, a splash of fish sauce, some coriander... and you're on your way! This is light but substantial enough for dinner with some good bread... DF and GF
