This one is called Cajun Mess, and I guess it does look a bit untidy....spiced, roasted strips of capsicum, red onion, with black beans and corn kernels, then tortilla cut into triangles, tossed with oil, salt and pepper and crisped up in the oven to use as utensils...And yes, mashed avocado on top, with lime juice... Vegan, GF (If you use corn tortilla) and DF

These are Fiery Chipotle Fritters, but obviously the heat is entirely up to you... I made these according to the recipe and it wasn't very hot at all, so you can ramp up from there as suits your household! A whole head of broccoli and the stem grated (stem peeled), some corn kernels, coriander, spring onions, oregano and thyme, all held together with chickpea flour... Vegan, GF and DF

Kumara and chickpea salad - cumin, coriander and red pepper flakes to warm up the flavours, lemon, red onion, garlic, parsley... fresh and delicious! Vegan, GF and DF

Humble ingredients, great flavour! This Lentil Tabouleh has red onion, cherry tomatoes ( a bit of a stretch for local? Kakanui tomatoes are available already!), lemon, and the little French lentils...eat it with flat bread, serve it on rice or just eat it with a spoon.... Vegan, GF and DF

And finally a pretty traditional moussaka with lamb. Is stacked with vegetables, layered with eggplant and topped with a savoury custard....There you have it! This one is neither GF nor DF...
