Time for something light, fresh and QUICK!  This Eggplant and Quinoa salad with chopped hazelnuts and roasted carrot will definitely do the trick! Vegan, DF and GF

I've been surprised by the versatility of Jackfruit. Here it's marinaded overnight and then the actual cook time is really quick. Toast some pre-made tortilla, slice an avocado, pull together a scratch coleslaw, done. Vegan, DF and GF depending on the tortilla - Jackfruit "Pulled Pork" and tortilla

Msa'aa  Is a vegetable bake full of warm spices and fresh veg goodness - there's kumara, courgette, capsicum, red onion, tomatoes, chickpeas, garlic... is a very good time! Again, it will only take you about half an hour to pull together and we've done the hard work on the Lebanese 7-spice blend for you... Vegan, DF and GF

One of the great things about curries is you can make them one day and they're really good the next day as well.... this vegetable curry with roasted cashews is no exception. Make use of whatever vegetables you have to hand, there's coconut milk, layers of spices, and crunchy toasted cashew on top. Yum.  Vegan, DF and GF

This is one of those times where I throw something together that's just what I feel like eating, and then it turns out to be very yum and I have to scramble to remember how I made it... chicken dumpling soup is an offshoot of last week's chicken sesame balls. It starts off with some onion, garlic and ginger, then veg stock, then some leafy greens, a splash of sriracha (cos it's sitting in the fridge right?), and then I made cute little torpedo shaped chicken dumplings and dropped them in. And some noodles. DF and GF if you use rice noodle.
