These spring onion pancakes (Cong You Bing) are a bit time-consuming to make but a lot of fun. There's a lot of "rest for 20 minutes" - I think that phrase shows up at least three times in the recipe - which makes it a good activity to do with small people cos they can jump off and do something else for a bit and then come back. I haven't tried to make these with non-gluten flours but if you have a favourite GF flour mix they would be worth a crack...Super simple: flour, salt, sesame oil, water, spring onions, and more than an hour, much of which is spent doing something else. These are vegan and dairy free, and could be GF with the right flour blend.
The Lentil Berbere stew is a deeply comforting substantial thing - brown lentils, fava beans (dried broadbeans), tomato, onion, garlic, spices, spring onion and parsley... It sounds like something that would take a long time but actually you can have this done in about 40 minutes. The Berbere spice has a bit of heat, but mostly loads of fragrant spices: fenugreek, paprika, ginger, cinnamon, cloves, allspice, nutmeg, cardamom ... as well as onion and garlic powders. The Lentil Berbere Stew is Vegan, DF and GF.
This soup is very gentle ... it has leek and cauliflower, both very mild flavours and it has rice to thicken it up. If you want to zing it up a bit you can add srirarcha and fish sauce but these are optional! The small handful of shredded sorrel is recommended however, to give a lemony hit. The leek and cauliflower soup is vegan, it does have butter in the recipe but this can be subbed for a non-dairy spread to be DF and GF.
So you get a bulb of fennel in your Locavore Box and you think to yourself - WHAT am i supposed to do with this?! Here's an answer to that question: Fennel crumble. The fennel is sliced and braised in the oven while you make the crumble mix: this has flour and oats so is not GF (you may have a nifty GF crumble recipe, in which case, go for it - just omit the sugar...). There's parmesan mixed through the crumble - again you can sub pecorino for a Dairy free version. So generally speaking the Fennel Crumble is vegetarian only.
This is my go-to curry when eating out Indian: saag gosht or palak gosht is a lamb curry with leafy green gravy - this version uses silverbeet. There's a heap of flavour in here - ginger, garlic, cumin, cloves, cardamom, coriander, tomato paste. The meat is marinaded in yoghurt with the garlic and ginger mixed through (coconut yoghurt will work). The Saag Gosht is DF (If you sub coconut yoghurt) and GF.
This is a very simple braise of pork sausages with apple, potato, onion and pumpkin, and even broccoli! It's a meal in a pan! It also only takes about 20 minutes from start to finish, and as with many of our favourite things, the tasks stack inside each other so there's no stress - do this thing, then do this thing, then do this thing... Pork sausages with apple is dairy and gluten free - choose your sausages carefully.
