The packs of firm tofu from Jia He come with 2 blocks of tofu, and I used one block sliced into four strips. They were so good I ate all of them. You may need to use both blocks...Satay Tofu skewers - vegan, DF and GF

This salad is super quick to put together and can happily be a meal all on its own (although there is no yellow/red, which is troubling for someone insistent on eating the colours). Cucumber, avocado, chickpeas, fresh herbs, lemon - Cucumber, avocado and chickpea salad! Vegan, DF and GF

Stuffed potato cakes are a hearty meal in a handy package! These have mushroom, chard or kale (or zucchini in summer) and loads of summery flavour from oregano, thyme, rosemary, garlic and red pepper flakes. They are a bit hands-on to make but they're worth it! Also they are Vegan, DF and GF

Fregola/pearl couscous/mograbieh is one of my favourite things (when it comes to food I have quite a few). The fact that you find it in so many parts of the world is a good indicator that other people agree... This quick meal in one has fregola, broccoli, chickpeas, walnuts, capers, red pepper flakes, parmesan (or yeast flakes for a vegan version) and a pesto of fresh herbs, more walnut and lemon. It's very good! Fregola, broccoli and chickpea salad  - can be vegan and DF

Beef and Broccoli with Ramen is so simple, and such a winner every time. Marinaded strips of beef (would recommend cutting your own rather than using shop-prepped schnitzel or beef stir fry), lightly blanched florets of broccoli, seared and cooked together really quickly while the noodles cook, then plate! Will take you about 15 minutes, honestly. Can be GF if you go for rice noodle, and is DF

So I had some minced salmon  to experiment with.This was one of the outcomes - salmon and corn soup. This is quite a sturdy soup and if you have it with some good bread -or even without - it would be just fine for dinner. It has minced salmon, corn, miso, garlic and ginger, and then at the end I added some green olives chopped up and the salty tang was an excellent finish.That's pretty much the recipe right there. Doesn't take long at all and was very yum for dinner and again for lunch... DF and GF
