When the world gives you celeriac, what are you going to make? Delicious things for the start of August
So this recipe uses celeriac peeled or grated into long strips, as a substitute for pasta. You can also make a very grown-up kind of mash with celeriac, or peel it and cut it into chunks to go in roasties... Celeriac pasta with Mushroom and Kale is what we're talking about here however!
This is a corn and cauliflower soup with yams and lime which give it definite tang and zing. It's very good but a little unusual, which is possibly why the image file is labelled "Weird Soup"...
Borscht is an Eastern European classic, so chock full of vegetables you could eat it with a fork. (especially if I have made it, as my children will tell anyone). There's beetroot, potato, and dried mushrooms, but there's also cabbage, carrot and celery... is a very hearty number.
Next up is a very soothing and satisfying fish bake, with cauliflower and leek and a touch of lemon. It's light and delicious...
