The eggplant curry could be dairy free and vegan with a few substitutions which would work well, so it could be 6 out of 6 for dairy free as well, and 4 vegan options. Richard from whitestone cheese was telling me about making larb so this week there's an aubergine larb and a pork larb - both featuring that signature flavour profile: sharp, sour, salty, spicy...
